Crawmerax had huge variety in his attack options, and adds with varied weaknesses and mechanics which combined to make him an excellent ending to The Secret Armory. Master Gee actually has unique design and requires a bit of strategy to beat, and Dexiduous is more of an endurance match. Anyone can tell that "Novas" are a cheap cop-out in terms of challenge and design, and simply make Moxxi's weapons all the more necessary. Thus far, Hyperius, Pyro Pete (To a lesser extent), and Voracidous have been reliant on massive and unavoidable AoE damage to challenge players. I still hold out hope that Gearbox gets it together with raid boss designs. None of the current DLCs compare, in my opinion, to the quality of BL1's best DLCs, but they're decent enough in their own rights. If I had to choose one, I'd take the first.
